How To Cook Perfect Beets In Your Instant Pot!
Beets are notoriously long-cooking vegetables. While they still can take some time in your Instant Pot, the good news is you can walk away from them while they are cooking rather than having to stand over the stove monitoring their progress. A stovetop pressure cooker may cook the beets faster. In my WMF Pressure Cooker, it only takes 15 minutes and a quick release. However, you cannot leave a stovetop pressure cooker unattended. Cooking whole beets in a saucepan can take an hour of constant monitoring, though you can reduce that time by peeling and cutting the beets into slices or chunks. The Instant Pot makes preparing beets a no-brainer, even if it is a bit longer process.

How To Cook Perfect Beets In Your Instant Pot!
Ingredients
- 3 medium to large beets
- 1 cup water
Instructions
- Wash beets thoroughly and remove stems about 1/2-inch from the top of the beet. Try not to cut into the beet. Leave the tail intact.
- Place a steamer rack and one cup of water into your Instant Pot. Place beets on the rack.
- Replace lid and push the pressure toggle to SEAL. Set your IP on MANUAL, at HIGH heat, for 20 minutes for medium beets, 25 minutes for large beets.
- Once the time has elapsed, and the IP has switched automatically to the WARM mode, allow the pressure to release naturally. This will take around 13 minutes. When the pressure valve has dropped down, it is safe to remove the lid. Push a bamboo skewer through the largest beet. If it goes through the center without resistance, the beets are done. If there is resistance, you may have to cook them for another five minutes or so with a quick release.
- Drain the beets and allow them to cool enough for you to handle them. With a paper towel, rub the skins off the beets. Now you may cut them as needed for their intended recipe.

Worked perfectly
I have always stayed away from cooking my own beetroot because I thought it would be messy and woody!
How wrong was I!
I am so glad I found your YouTube page on cooking beetroot
It worked perfectly. No mess, easy to peel, I just followed the instructions but wore plastic gloves, the skin came off really easy.
I am now converted. Made my batch of beetroot & Apple Soup it was lovely.
Beetroot is on my next supermarket shop.
Hi, Cathy! I’m so glad this recipe worked out for you. Beets are wonderful, subtly sweet with a nice texture. What’s not to love? The beet greens are excellent as well. They’ve quickly become my favorite! Just steam them for a few minutes; they don’t need anything else. Try my Creamy Ukranian Borscht. It is easy to prepare and seriously delicious. Happy Cooking, Danielle

Hi, Issie,
Thank you for your question. Beets are wonderful and so simple to prepare. My Rainbow Burger is on my blog with its own video: https://www.timeforchangekitchen.com/danielles-rainbow-burger-an-extraordinary-fusion-of-textures-flavors-and-colors-in-a-bun/ It is made up of fermented vegetables, avocado, sweet potato and marinated beets. I also have the recipe for the bun on my site which is a perfect fit for this particular sandwich. The combination of ingredients is extraordinary. I hope you love it as much as I do. You can also find the recipe for making fermented veggies on the recipe page of my blog. Happy cooking! Danielle
