This quick and easy recipe takes only a couple of minutes to put together and only thirty minutes of simmering before it is ready to enjoy. Great as a dipping sauce for calzones, it is also a perfect light sauce for most pasta dishes.

Ingredients
- 3 cups chopped or roasted tomatoes
- 1 cup homemade tomato paste (may substitute one tablespoon commercial tomato paste)
- 1 tablespoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried garlic granules
- salt to taste
Instructions
- Pulse tomatoes and tomato paste in a blender until fairly smooth. Transfer to a medium saucepan on medium-high heat.
- Stir in remaining ingredients.
- Bring to a slow boil or a fast simmer. Cook uncovered for thirty minutes, stirring occasionally.
- Reduce heat to low and keep warm until ready to serve with calzones.

Yes, this sauce freezes very well. I sometimes make a large batch of it and freeze it in 2-cup containers that are large enough for my small family.
